We wanted to offer our customers authentic Sichuan dishes but found soon out that some of the original names were hard to "stomach" for some of our customers. So we thought long and hard and came up with more descriptive names as those dishes are too delicious to be put out of sight on a Chinese language menu (Read a Seattle Weekly writeup on the struggles of catering to a diverse customer base). We are glad that our efforts have paid off (See this article at Seattlest.com). Treat yourself to Thin Sliced Pork Belly with Bell Peppers or to Sichuan style Bean Jelly. Try out Sliced Pork Kidneys or be really wild and decide on Jelly Fish and "The Other Parts of a Pig". One of our signature dishes, The Swimming Fire Fish, presents the key flavors of Sichuan cooking: ma and la. "Ma" stands for the numbing flavor of Sichuan peppercorns while "la" represents the spiciness of chili peppers. Your experience of Sichuan cooking would be incomplete if you passed on the opportunity to try it for yourself.
